Knobby Apple Cake

I only ever use one bowl and I love that you don't have to peel the apples.

3 Tbsp. Butter, softened for easy stirring
1 C. Sugar
1 Egg, lightly beaten
1 tsp. Vanilla

1 C. Flour
1 tsp. Baking soda
1/2 tsp. Salt
1/2 tsp. Nutmeg
1/2 tsp. Cinnamon

3 C. Apples, unpeeled, diced
1/4 C. Nuts, pecans, walnuts, etc. toasted if you want and chopped lightly

Butter an 8"x8" pan and pre-heat the oven to 350.  Cream the butter and sugar
together.  Add the vanilla and egg.  Mix dry ingredients in separate bowl (or
not) and combine with sugar mixture.  Stir in apples and nuts.  Scrape into
baking pan and smooth out a little.  Bake for 40-45 minutes until it starts to
pull away from the edges a little and is a nice dark brown.
